Our emphasis at Lambert's has always been on quality and value. Our menu and wine list are created to compliment each other. The extensive wine list is primarily Californian with a smattering of international favorites. Our most esoteric section is the single vineyard zinfandels with more than 20 selections on hand. Zeke and Tina Lambert came to Taos, NM on their honeymoon seventeen years ago from San Francisco, CA. Tina found a job waitressing and Zeke became the chef at the Taos Inn. Four years later, Zeke and Tina decided it was time to start their own Restaurant, while they still had the energy.
One Restaurant, two kids (17 and 15), four cats, three dogs, and a Taos fixer upper house, Taos is called home. Zeke and Tina opened Lambert's the day after Thanksgiving in 1989. It's been fifteen years of love, sweat, laughter, great friends and wonderful support from family and locals. Wouldn't change a thing.
Zeke and Tina are in their 19th year of business. They are fortunate enough to have many great employees, some of them fairly new but some that have been with Lambert's from day one. Lambert's is great because of these and many other creative and dedicated employees who became family.
Lambert's focus is on quality and consistency. But, doesn't every Restaurant say that?? This goal of consistency is not always easy to accomplish. Our sauces are made from scratch, some of them, like the lamb demi-glace, take days. Vegetables are fresh and local when available. What is most important to us, is when we have customers who tell us the food is as good or better since the last time they came in, which might have been two years ago. This is important to us, to be good everyday, for years, consistently. If Lambert's can succeed at this, then we've done what we set out to do.
